Gluten-Free Zeppole
Yes you read that correctly and below you will find the recipe a lot of you asked me for. Keep in mind zeppole can be made in various ways, this is how I make them for my family. Enjoy my version

Recipe
1 cup of water
1/2 cup of butter
1/2 teaspoon of salt
1 teaspoon of sugar
1 cup of gluten free flour ( I used GF Caputo Flour)
5 large eggs (Conestoga Farm Eggs)
1/4 cup of icing sugar for dusting when ready to serve.
On medium heat bring water and butter to a boil. Transfer this liquid to a mixer bowl and attach the flat beater before adding all dry ingredients.
Once the mixture is all combined and into one dough ball start adding one egg at a time. Your batter will become bright and creamy. Let cool. Transfer into piping bag. If you don't have one, use a large ziplock plastic bag and snip one corner.
** Now this is where my recipe differs.
Spray nonstick spray into donut pan and squeeze out batter into each donut mold.
Bake in oven at 375 F for 28 minutes.
Time will vary on ovens. Let cool and fill with Amareno cherries and fresh crema. Sprinkle with icing sugar
